The first phase of the Innovation and Creativity in Culinary Arts module, part of the 3rd year curriculum of the Gastronomy and Culinary Arts Programme, namely the conceptual presentations, just took place at Varna University of Management.

The students’ task was to invent and present an innovative and creative culinary idea, as well as to offer a way of its practical realization, namely to follow the algorithm for elaboration and development of a new product.

During the presentations, students impressed with innovative and even eccentric ideas. Some of them presented non-standard combinations, others included elements of traditional Bulgarian cuisine, and a large part of foreign students enrolled in their projects the launching of traditional for their countries products in new markets.

After this first phase presentation, each of the students will have the opportunity to realize their ideas in the professional kitchens of the Culinary Arts Institute, and the next step of the innovative module will be a public event, which will be held on February 20-21, 2020. During the event the young chefs will demonstrate their innovative culinary products in front of the evaluation board, F&B industry representatives and tourism professionals. The demonstration aims to attract real business investors, who would appreciate the talents and skills of the students, but also might be interested to buy and launch in the real practice some of the ideas.

It is an interesting fact that the public event of the module “Innovation and Creativity in Culinary Arts” will also be organized and managed by undergraduates. This task will be given to students in VUM International Hospitality Management Programme within their Events Management module.
