
At just 25 years old, Chef Hristo Filyov has already built an impressive career in some of the world’s most prestigious restaurants. After graduating from the Sofia Vocational School of Tourism, he began his career at the Marinela Hotel under the mentorship of renowned chefs Petar Nikolov and Andrey Stoilov. Chef Filyov quickly rose through the culinary ranks, becoming sous-chef at Zornitza Family Estate Relais & Châteaux, where he worked under Chef Veselina Kalev.
In 2023, through the Swiss Foundation for the Development of Young Culinary Talents (Foundation Uccelin), Chef Filyov gained invaluable experience at some of the world’s top restaurants, including Central (ranked No. 1 globally in 2023), as well as the three-Michelin-starred Frantzen, Hotel de Ville, and Schloss Schauenstein. Now, in 2024, Chef Filyov serves as the Executive Chef at Boutique Hotel & Fine Dining.
Mediterranean Dinner
This evening will take you on a culinary journey through the Mediterranean with a menu curated by Chef Hristo Filyov, executed in collaboration with the chef-instructors and students of the Culinary Arts Institute. Together, they will present a perfect blend of freshness, tradition, and modern culinary techniques.
The dinner will start with a duo of amuse-bouches, featuring creamy goat cheese panna cotta paired with a crispy pork croquette and pea purée.
The starter will transport you to the heart of the Mediterranean, offering a harmonious combination of eggplant, Parmesan, olives, and crunchy pumpkin seeds – balancing savory and earthy flavors.
The main course will showcase a refined dish of bonito served with classic Italian Puttanesca sauce, accompanied by the vibrant colors and flavors of beetroot and chickpeas.
For dessert, you’ll enjoy a delicate layered pumpkin cake, paired with Bailey’s ice cream and crunchy walnut praline.
The meal will be complemented by freshly baked focaccia, served with caramelized onions and fennel seed butter.
Expect an evening filled with sophisticated flavors and meticulous attention to detail.
