Culinary Demonstration by VUM in Ruse

The Program Director of the Culinary Arts Institute at Varna University of Management (VUM),Head Chef Hugues Boutin, together with students from the program, held a special culinary demonstration at the Professional High School of Tourism “Ivan P. Pavlov” in Ruse. The event aimed to showcase both haute cuisine and the educational opportunities at VUM’s Culinary Arts Institute, inspiring young talents to pursue further studies in the field of gastronomy.
During the demonstration, the high school students had the opportunity to observe advanced culinary techniques, learn about modern cooking methods, and taste exquisite dishes prepared by the VUM team. The menu featured:
- Amuse-bouche – smoked salmon mousse on sesame crackers, sweetened red cabbage pearl caviar, and pickled spicy pepper, prepared by Toma Goranov;
- Starter – beetroot dumplings with cream cheese and herbs filling, walnuts, Parmesan crisps, and lemon caviar, created by Stefani Koeva (VUM student and alumnus of the high school in Ruse);
- Main Course – duck breast sous-vide with coffee and dark chocolate sauce, served with parsnip purée, prepared by Head Chef Hugues Boutin;
- Dessert – dark chocolate mousse with rose, paired with rose ice cream and walnut Dacquoise crumble, crafted by Svetoslav Aleksandrov (VUM student and alumnus of the high school in Ruse).
The event was particularly meaningful for the VUM team, as both Stefani Koeva and Svetoslav Aleksandrov began their culinary journey at the same high school in Ruse. Returning as VUM students and showcasing their progress was a proud and inspiring moment for them.
The presentation concluded with an introduction to Varna University of Management and the Culinary Arts Institute, where participants learned more about higher education opportunities in culinary arts, the programs offered at VUM, and career prospects in the international gastronomy industry.

It was a pleasure to share knowledge, skills, and inspiration with the young culinary talents of Ruse.
