The brilliant CAI team conquered Thessaloniki
In the period 1-4 March, a team of a chef instructor and students from the Culinary Arts Institute at Varna University of Management took part in the 11th Culinary Competition of Southern Europe, which took place in Thessaloniki, Greece.
The prestigious event is organized every two years from the Chefs Association of Northern Greece in collaboration with Thessaloniki International Exhibition and Conrgress Centre, HELEXPO and is supported by the World Association of Chefs Societies (WACS).
In a fierce competition with participants from Greece, Serbia, Turkey, Cyprus, Ukraine, Latvia, Mongolia and Taiwan, our culinary masters impressed the jury and the audience and grabbed medals in all three categories in which they participated.
Our chef instructor Kaloyan Kolev took the gold and the title Chef of the Year 2019 with his Spring Garden dish revealing roasted lamb loin, grilled green asparagus, chipotle and chives Hollandaise sause, rye bread soil, purple cauliflower, spinach puree, micro sorrel and micro peas.
In the Student Pastry Chef category, our student Kristina Dimitrova introduced two dishes to reach the silver medal. She impressed with gorgeous presentation of “Bulgarian flavours” – spelt mousse, lavender gel, white chocolate sand, honey jelly and biscuit, as well as a Deconstructed strudel – apple creme, crispy filo, chamomile apple, мuscovado apple, cinnamon foam, walnut gel and raspberries.
The 3rd year Culinary Arts Institute student Iv-Angelo Nikolov was also brilliant in presenting a pan seared seabream with celeriac puree, glazed baby carrots, veloute with red pesto, braised endive, beetroot powder and parmesan chips. He was awarded a silver medal in Student Chef of the Year category and reaffirmed the successful performance of the team.
The Culinary Arts Institute at Varna University of Management prepares students for professional career in the catering industry. This is the only accredited program at a university level in Eastern Europe at present and leads to a Bachelor’s degree upon successful completion of the study course.
The program is being taught in English language by experienced chef-instructors with an extensive practical experience around the world. An integral part of the studies are also the mandatory internships at high-end and Michelin-star rated restaurants in France, Spain, Portugal, Netherlands, UK, Germany and more.
