Culinary Demonstration by the Culinary Arts Institute at PGOHHT “Prof. Dr. Assen Zlatarov” – Shumen

On February 12, 2025, Chef Kaloyan Kolev, instructor at Culinary Arts Institute, part of Varna University of Management, together with four second-year students, visited PGOHHT “Prof. Dr. Assen Zlatarov” in Shumen.
The demonstration provided students with an opportunity to experience firsthand the dynamics of a professional kitchen, as they observed and actively participated in the preparation of dishes under the guidance of experienced professionals. The highlight of the presentation was the sous vide method—a low-temperature cooking technique that ensures precise control over texture and flavor. For the demonstration, the team prepared sous vide pork, which resulted in exceptionally tender and juicy meat.
The Culinary Arts Institute students not only showcased their practical skills but also shared their personal experiences and insights from their education, offering valuable advice on ingredient handling, cooking techniques, and contemporary culinary trends. At the end of the session, the aspiring chefs had the chance to apply what they had learned by plating their own dishes, following professional plating techniques under Chef Kolev’s expert guidance.
