At the Culinary Arts Institute at VUM, education is not just about learning recipes—it’s about mastering techniques, refining creativity, and developing the skills necessary for a successful career in the culinary world.

Recently, our students had the opportunity to immerse themselves in an engaging, hands-on class led by Chef-Instructor Kaloyan Kolev, where they explored the fine art of chocolate confectionery and artisanal bread making.

With precision and attention to detail, students stepped into the roles of chocolate masters, crafting exquisite, handcrafted chocolates. Each piece was carefully designed and polished to perfection—demonstrating the level of craftsmanship required in high-end confectionery.

Alongside their chocolate creations, students also refined their skills in traditional French baguette making. From kneading the dough to achieving the perfect crisp golden crust, they learned the delicate balance of patience and technique needed to create authentic, high-quality bread.

Experiential learning opportunities like this are at the heart of the CAI curriculum. By blending theory with hands-on practice, students not only acquire technical knowledge but also develop the confidence and expertise that set them apart in the culinary industry.
